When you look at videos on “baking”, you often find yourself looking at cakes being baked in conventional ovens. Alternatively, they may be portrayed as being baked in OTG ovens or oven, toaster and griller ovens. Chefs and many people who are in the habit of baking claim that you “can’t” bake cakes in a microwave oven — you must have a conventional oven or an OTG.

Nonetheless, this may not necessarily be a universal truth as it is often implied. Before you decide on a choice between OTG ovens and microwave ovens, it’s vital to know the difference between the two, and they are different in many ways.

The Technology is Different

An OTG makes the use of nickel/chromium coils which heat up the oven interior. The oven also contains a fan to help even the hot air circulation. This mechanism is meant to simulate a real charcoal oven. The generation of heat depends on the temperature of the coil, so it typically takes some time to preheat and additionally bake dishes.

Any microwave oven buying guide will tell you that microwave ovens produce  electromagnetic waves that food absorbs on the inside, and that’s how heat is generated. The electromagnetic waves range from  300MHz to 300GHz. The range falls in the middle of a radio wave and infrared radiation spectrum.

A microwave oven works fast at heating up, and takes little time to preheat. Food is heated instantly, and there are no fans in the appliance as heat gets absorbed by food easily. Microwaves come with turntables that heat, cook, bake and grill food evenly from all sides, and bottom to top.

Interiors

OTG ovens have racks in their interiors. There may be two or more, depending on the capacity of the device, and trays can be slid in. These are positioned one above the other so that more than one dish may be baked, toasted or grilled together. In a microwave oven, there is a single turntable that rotates to bake, cook or grill food. The turning mechanism makes food cook from all angles. Only one dish can be placed in a microwave oven at a time. Rectangular dishes do fit into larger sized microwaves, but since the turntable is round, this may prove difficult in some smaller capacity microwave ovens. In an OTG oven, all shapes of dishes can fit, provided the size of the racks accommodate them.

Types of Dishes Used

You can use aluminium, glass and silicone dishes in an OTG oven, and silicone, plastic and glass are used for different purposes in a microwave oven. To bake in a microwave, glass and aluminium can be used too. To cook in a microwave, or heat food, only glass and plastic can be used. A microwave oven buying guide will specify the types of material for different purposes.

Usage

OTGs work much like conventional ovens do, cooking food slowly, but achieve fabulous results. They have knobs and temperature dials. Microwave ovens have digital displays and are hi-tech devices that you can choose programmes to cook with, heat, defrost, grill, or bake food. They have temperature modes for baking, and can work much faster than traditional OTG ovens.
