India is a multicultural nation, therefore, the peoples of India have always been directed by different religions, philosophies, languages, music and definitely, cuisines. From the northernmost point of the Himalayan terrain to the southern peninsula into the Indian Ocean, India tells its story through food.

India has different sorts of cuisines which date back to loads of historical invasions. There are a variety of regional and traditional cuisines native to the subcontinent. But primarily, the cuisines are divided into two distinct categories:

When I was young, my grandmother used to cook Luchi (Bengali for puri) and Shada Aloo Torkari (cubed potatoes cooked in a light white gravy) every Sunday. As a child, I would wait for the entire week just to lay my hands on a plate full of the above-mentioned Bengali delicacy. Well, this was my story.

Every cuisine has its own story to tell. There are families in India that grow with food. Someone comes home after a long day’s work and bonds with their family over dinner, that is, once again, food. Food was, is and always will be a divine charm over which old relationships are relived and new ones are made. Food is the ingredient that binds us together.

India is famous for its variety of spices. Although the Europeans took our spices abroad, it was our land that produced black peppercorns which today, are of profound necessity in almost every cuisine. Without a pinch of black pepper, the steak wouldn’t taste like steak.

Who hasn’t heard of the famous spice jewel crown of India, Garam Masala (Indian curry mix)?  The right proportions of cinnamon, clove, cardamom, nutmeg, peppercorns, bay leaf, etc, ground together with love can easily transport one into a separate plane.

This spice mix not only enhances the flavor of a dish but helps fight inflammation, bloating flatulence, and even nausea. It is full of antioxidants which help in preventing various kinds of skin problems.
